These delightful Southern-style Biscuit Boombs are perfect for a quick and satisfying appetizer or side dish. Flaky homemade biscuits are filled with melty mozzarella cheese and then brushed with a garlicky herb butter for an irresistible flavor combination.

Ingredients:

All-Purpose Flour 2 cups
Baking Powder 1 tablespoon
Salt 1 teaspoon
Baking Soda 1/2 teaspoon
Unsalted Butter, cold and cubed 1/2 cup
Buttermilk 1 cup
Mozzarella Cheese, small cubes 12 cubes
Melted Butter 1/4 cup
Garlic Powder 1 teaspoon
Fresh Parsley, chopped 1 tablespoon

Instructions:

  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper for easy cleanup.

  2. In a large bowl, whisk together the dry ingredients: flour, baking powder, salt, and baking soda.

  3. Using a pastry cutter or your fingers, cut the cold cubed butter into the dry ingredients until the mixture resembles coarse crumbs.

  4. Pour in the buttermilk and mix gently with a spoon or spatula, just until the dough comes together. Avoid overmixing.

  5. Lightly flour a clean work surface and turn the dough out onto it. Knead the dough gently a few times to form a smooth ball.
