Ingredient Quantity
Beef blade steaks 6 medium
Onion 1 medium
Fresh mushrooms 8 oz.
Chicken broth 3/4 cup
Heavy cream 1/4 cup
Dry claret 1/4 cup
Unbleached flour 1/4 cup
Salt and pepper To taste
Oil 4 tablespoons
Fresh thyme 1 teaspoon
Mild paprika 1/2 teaspoon
Fresh parsley 2 teaspoons chopped

Instructions

  1. Brown the Beef: Heat 2 tablespoons of oil in a skillet over medium-high heat. Season the beef blade steaks with salt and pepper, then brown them on both sides in the skillet. Transfer the browned steaks to the slow cooker.
  2. Sauté Onions and Mushrooms: Add the remaining 2 tablespoons of oil to the skillet and sauté the sliced onions and mushrooms until softened and slightly browned, about 12-15 minutes. Stir in the minced thyme and paprika for added flavor.
  3. Assemble the Dish: Spread the sautéed onion and mushroom mixture evenly over the beef steaks in the slow cooker.
  4. Prepare the Sauce: In a separate bowl, whisk together the flour, dry claret, and chicken broth until smooth. Pour this mixture over the beef and mushrooms in the slow cooker.
  5. Slow Cook: Cover and cook on low heat for 6-8 hours or high heat for 4-5 hours, until the beef is tender and flavorful.
  6. Finish with Cream and Parsley: Once the cooking time is up, remove the beef steaks from the slow cooker and set aside. Stir in the heavy cream and chopped parsley into the sauce until well combined. Coat the steaks with the creamy mushroom sauce before returning them to the slow cooker.
