Ingredients:

Shredded cheddar cheese 1 cup
Sour cream 1/2 cup
Large eggs, lightly beaten 2
Chopped green onions 1/4 cup
Crumbled cooked bacon (optional) 1/4 cup

Instructions:

  1. Preheat oven and prepare muffin tin: Preheat oven to 375°F (190°C) and spray muffin tin with cooking spray.

  2. Combine ingredients: In a large bowl, combine mashed potatoes, shredded cheddar cheese, sour cream, beaten eggs, green onions, and crumbled bacon (if using). Season with salt and pepper.
