These Mashed Potato Muffins are a delicious and comforting way to use up leftover mashed potatoes. They’re packed with cheesy flavor and have a fluffy texture that’s perfect for breakfast, lunch, or a snack.
Ingredients:

| Crumbled cooked bacon (optional) | 1/4 cup |

Instructions:

Preheat oven and prepare muffin tin: Preheat oven to 375°F (190°C) and spray muffin tin with cooking spray.

Combine ingredients: In a large bowl, combine mashed potatoes, shredded cheddar cheese, sour cream, beaten eggs, green onions, and crumbled bacon (if using). Season with salt and pepper.

Fill muffin tin: Spoon potato mixture into prepared muffin tin, filling each cup to the top.
 - 
Bake: Bake in preheated oven for 20-25 minutes, or until tops are golden brown and muffins are set.
