This creamy and comforting Broccoli Cauliflower Cheese Soup is a delicious and healthy option for a cold day. Packed with vegetables and flavorful cheese, it’s a satisfying meal that’s easy to make.

Ingredients:

Onion, diced 1 small
Garlic, minced 4 cloves
All-purpose flour 1/4 cup
Chicken or vegetable stock 2 1/2 cups
Half and half 2 cups
Broccoli florets, chopped 2 cups
Cauliflower florets, chopped 2 cups
Carrot, shredded 1 large
Dijon mustard 1/2 teaspoon
Cheddar cheese, grated 2 cups
Kosher salt and freshly ground black pepper To taste

Instructions:

  1. Sauté Aromatics: In a large pot or Dutch oven, melt butter over medium heat. Add diced onion and minced garlic, sautéing until softened and fragrant, about 3-4 minutes.
  2. Create Roux: Sprinkle flour over the onion and garlic mixture. Stir constantly for 1-2 minutes to cook the flour, forming a roux that will thicken the soup.
